Emily’s, Grandma Foley mini pecan pies
My niece Emily loves to bake. We all look forward to family gatherings and Emily’s mini pecan pies. She inherited this recipe from Grandma Foley on the Turner side of the family. We are happy to adopt these delicate mini southern pies into our own family. Thank you Emily!
For the dough:
1 stick butter
One 3 oz pkg cream cheese
1 C flour
Let butter and cheese get soft and mix well using wooden spoon or hands. Add flour and mix. Do not grease pan. Put small amount in 24 mini muffin cups and work up sides of pan with fingers.
Filling:
1 C chopped pecans
¾ C light brown sugar
1 egg well beaten
1 tsp vanilla
dash of salt
Mix well and divide evenly among the 24 cups. Bake 20-25 minutes at 350.
