Gameday Meatball Sliders


1 pound ground chuck

2 eggs, beaten

1 cup Italian style panko bread crumbs

¼ cup grated Parmesan cheese

3 cloves garlic, finely chopped

1 tablespoon parsley flakes

5 tablespoons olive oil

4 cups marinara sauce

12 mini hamburger buns

12 slices mozzarella cheese

Bib lettuce


1. Put ground chuck in medium bowl and sprinkle well with salt and pepper. Add eggs, bread crumbs, Parmesan cheese, garlic and parsley and mix lightly until combined. Shape mixture into 12 two-inch balls.

 2. In a four quart saucepan or Dutch oven, heat oil over medium-high heat. Add meatballs and cook two minutes on each side or until golden brown.

3. Pour marinara sauce over meatballs. Heat until boiling and reduce heat to low. Simmer uncovered for 30 minutes until meatballs are thoroughly cooked.

 4. On each toasted bun bottom, place bib lettuce, one meatball and one slice mozzarella cheese. Cover with toasted bun tops.
