The restaurants were designed by both American and Chinese architects to emulate Chinese palaces. Both restaurants feature imported rosewood ceilings, carved wall panels, antique furnishings, statues, and artwork as well as inlaid mother of pearl dining chairs. Lush gardens, waterfalls, pagodas and koi ponds surround the restaurants.

The Wong chefs have become world renown because of creating signature dishes like the following:

  • “Fried Soft Shell Crab with Tong Cho Sauce”—Tong Cho sauce is a reduction of soy and vinegar with ginger, garlic and crushed peppers. Tong Cho has become so popular the Wong Brothers have bottled it for home consumption.
  • “Alligator Stir Fried”—Fresh Louisiana alligator stir-fried with mushrooms and topped with almonds or stir-fried with Szechuan peppers and julienne vegetables.
  • “Crawfish in a Spicy Lobster Sauce”—Crawfish tails stir-fried in a spicy lobster sauce, black beans, minced pork and onions.
  • Whole Steamed Speckled Trout, Black Drum or other seasonal fishes.
