Simple is the Game, Italian is the Name
Whether you’re adding a few Italian favorites to your everyday recipe repertoire or planning a complete dinner, meal planning with Italian foods can be simple and enjoyable. Introduce friends and family members to Italian cuisine with an irresistible antipasto or entree or plan an entire meal in the traditional Italian fashion. But whenever you’re planning meals, not just Italian, remember to keep it simple and consider the compatibility of textures, colors, and flavor. Serve a crisp-textured side dish with a soft textured main dish. Contrast a mild first course with a zesty second course. Balance a hot food with a cold accompaniment. Layered Meat and Polenta
Ingredients:
2 1/2 cups meat sauce or meat and mushroom sauce (home made or jar)
2 cups water
1 cup yellow corn meal
3/4 cup cold water
1/2 teaspoon salt
1 cup grated parmesan cheese
Directions:
Heat meat sauce, cover and keep warm. In saucepan, bring 2 cups of water to a boil. Meanwhile, combine cornmeal, 3/4 cup cold water and salt. Slowly pour cornmeal mixture into boiling water, stirring constantly. Return just to boiling and reduce heat to low. Cook uncovered, about 5 minutes or until thick, stirring frequently. Pour enough cornmeal mixture into greased bottom of baking pan, or casserole. Cover with meat sauce mixture and top with grated cheese. Continue layers until all ingredients are used. Place baking dish into pre-heated 350 F oven. Bake for 15 minutes or until cheese begins turning golden. Remove from oven and let sit for about 5 minutes before serving. Serve with mixed green salad, crusty bread and a Lambrusco wine for an unforgettable meal.
